A study in texture and restraint. We take a traditional batter and aerate it until it barely holds its shape, serving it alongside berries picked at the brief peak of their season.
Silk texture, crisp greens, lifted acidity.
Cured carefully and sliced to showcase its natural marbling. The greens are sourced from our own plots, dressed moments before serving to maintain their vital crunch.
Charred edge, tender center, deep savor.
Sourced from independent producers. We sear it aggressively over wood fire, then rest it exhaustively. The resulting plate is familiar, yet refined to its absolute essence.
Cold, floral, bittersweet, and clean.
An ending that doesn't overwhelm. Madagascar vanilla bean suspended in raw cream, countered by the astringent clarity of dark cocoa and the sharpness of wild fruit.
